Crispy Cajun Potatoes is a crispy and creamy potato starter one craves in all barbeque nation. In this Crispy Cajun Potatoes, baby potatoes are fried till crispy and a rich creamy mayonnaise-based sauce is poured over. You can now make this Barbecue Nation Crispy Cajun Potatoes at home.
Ingredients:
Baby Potatoes - 1/2kg
Salt - 2 tsp Water - 2 Cup
Corn Starch - ¼ Cup
Oil - For Frying
For The Sauce:
Mayonnaise - 1/2 Cup
Red Chili Powder - 1 tsp
Black Pepper Powder -1/2 tsp
Thousand Island dressing - 2 tbsp
Dried Oregano - 1 tsp
Turmeric powder -1/4 tsp
Coriander Leaves (finely chopped) - 2 tbsp
Salt - 1 tsp
Method:
Pressure cook the potatoes for 2 whistles with water and salt.
Once the pressure subsides. Strain and smash the potatoes with the skin-on.
Coat them with corn starch and deep fry for a minute. Strain out the excess oil and after a minute again fry them until crispy and golden brown.
In a bowl mix all the ingredients for the sauce until well combined.
Pour over the fried potatoes and then garnish with chopped coriander leaves.
Tips:
Double frying the potatoes maintains the crispiness.
If you want the sauce to be little runny can add 2- 3 tbsp of milk and combine them.
You can adjust the milk according to your consistency.
